If you’ve been following me for a while, you know I am all about simple meals. I believe that you can eat healthy food that tastes good…but doesn’t force you to spend hours in the kitchen! I don’t want to spend all of my time there! This cheeseburger bowl recipe is simple and can be ready in less than 30 minutes!

Recently, I’ve been seeing the bowl meal trend. Rice bowls have become pretty popular over the past few years. And of course, the grain-free, low carb, and Paleo communities have also come up with their versions as well,

Since I am not eating any gluten and not really eating gluten-free grains either, I wanted to find some way to make substitutions for grains. I also have wanted to incorporate more vegetables. In this dish, I use cauliflower “rice” and it works very well! It tastes great as well and it made an amazing meal!

Now, I will admit that I cheated just a little bit with the riced cauliflower. I bought a bag at Trader Joe’s and cooked it in the microwave because I had a busy day and didn’t have time to rice a full cauliflower head. I like to keep a few things like that on hand because it just makes life easier some days! And I would much rather have frozen riced cauliflower cooked in a microwave instead of fast food any day!

If you are avoiding dairy, you can leave the cheese out and make it just a hamburger bowl instead of a cheeseburger bowl. You should always do what you can to make dishes your own. This recipe really opens up a lot of possibilities to add different ingredients and different flavors.

Top this with a little mustard for some extra flavor!

This cheeseburger bowl is definitely a keeper! It is naturally grain and gluten-free and is low carb as well. I also have a ground beef taco bowl!

Cheeseburger Bowl (Recipes for Two)

This simple bowl meal is easy to make and is perfect for a weeknight meal or quick weekend dinner.

Cook Time 20 minutes mins
Total Time 30 minutes mins
Servings 2 people

Ingredients
  

  • 1/2 lb grass fed ground beef
  • 1 package riced cauliflower cooked
  • 1/2 to mato diced
  • 1 pickle diced
  • 1/2 small onion diced
  • 1/2 cup cheddar cheese shredded
  • Salt and pepper
  • Mustard optional

Instructions
 

  • In a large skillet, brown the ground beef
  • Add salt and pepper to taste
  • Line the bottom of two bowls with cooked riced cauliflower
  • Add ground beef, onion, pickle, tomatoes and cheese.
  • Mix fully.
  • Add some mustard
  • Serve

Notes

You will only use about 1/2 of the riced cauliflower package. Store the rest in your refrigerator and use for another meal!
