Ah, there is nothing quite like the hot days of summer to make you appreciate a nice cool salad! This simple summer salad is hearty enough to be a meal all by itself. But it can certainly also be a side dish as well.  The inspiration for this salad was the ingredients of the classic 7 layered salad but put together in a way that is perfect for individuals.

I did leave out the peas for this salad, because, well…..I didn’t have any and was too hungry to run to the store to get some! Hey, I just had to be honest! You can add them if you wish.

Most seven layered salad recipes include a self-contained salad dressing, but you can use your favorite dressing for a completely delicious salad!

This salad is both gluten-free and grain-free.

Simple Summer Salad (Recipes for One)

Servings 1

Ingredients
  

  • Organic spring mix
  • Parsley removed from stems
  • 1 hard boiled egg
  • 1-2 slices of bacon cooked and crumbled
  • tomatoes chopped
  • onion chopped
  • Cheddar cheese shredded

Instructions
 

  • Line a salad plate with spring mix and parsley
  • Add the remaining ingredients and dressing and enjoy!
