I’m always looking for budget-friendly, low-spoon ideas for dinner. That’s why I love making a chicken leg quarter for dinner. I can always find them reasonably priced, they taste amazing when baked, and they don’t require a lot of energy to make. One thing that I don’t like, however, is always having to cook them in the oven. Living in South Carolina, I do everything I can to not turn the oven on during the summer months!

It’s just too hot to even think of my oven adding heat to my kitchen. Especially when the temperature hits triple digits. And so I relegated fixing chicken leg quarters to the cooler months of the year. Until I got an air fryer! When I realized that I could air fry chicken leg quarters, I did a happy dance!

The first time I air-fried one, I was pleasantly surprised by how beautifully it turned out! The skin was beautifully brown and nice and crispy. The meat was so tender and moist! I was so impressed that I won’t do chicken leg quarters any other way now. The air fryer will be my go-to way of fixing them from now on.

Since I’m all about simple, my preparation for cooking a chicken leg quarter is very simple as well. I just use a little olive or avocado oil to coat the top skin of the leg quarter. I use a spray oil, which makes it super easy. Then I sprinkle on some seasonings of my choice. I usually use an organic adobo seasoning mixture that tastes amazing.

This dish is naturally gluten and grain-free (just be careful to pay attention to what is in the seasonings you use). I love to pair it with a nice salad or some pre-cooked rice.
