There is no side dish that says summer and cookouts quite like potato salad. This is simply a classic dish that is a must for any picnic. Made with only the freshest ingredients, This side dish is quite simple to make and is really tasty too!
I will admit that this dish was one of my favorites growing up. My grandmother used to make this for summertime family gatherings and for the 4th of July. My Mom took over potato salad duties later, and now I’m making this potato salad! When I originally asked for the recipe, I found out that there were absolutely NO measurements for any of the ingredients….just an ingredient list. So I’ve gone ahead and included measurements…but feel free to add more or less of something to your taste. One change that I made to this recipe was to use dill relish instead of sweet…but if you prefer sweet, then have at it! Sweet relish is just not my favorite….but that’s just me!
This salad is naturally gluten and grain-free as long as you are sure that the mayonnaise you use is as well.
Homemade Potato Salad
Ingredients
- 4 cups of potatoes diced and cooked
- 4 hard boiled eggs diced
- 3 celery ribs sliced
- 1/2 sweet onion finely diced
- 4 radishes diced
- 1/2 cup mayonnaise can use a little more if needed
- 2 tbsp mustard
- 3 tbsp dill relish
- Salt and pepper to taste
Instructions
- Mix all ingredients in a large mixing bowl.
- Allow to chill in the refrigerator for 2-3 hours to allow flavors to meld.
- Store and leftovers in a covered container.
