I’m not going to lie…I really love a good casserole during the fall and winter months. There is something so comforting about a hearty hot casserole for dinner when it’s cold outside. And so I wanted to start making some casseroles again! I love this hash brown and smoked sausage casserole because it is pretty simple to make. And it tastes amazing too!

This recipe reminds me a bit of my cheesy ground beef casserole recipe, which is one of my favorite recipes on the site! So when I first made this recipe, I knew it was also going to be a favorite!.

Here’s a little trick…if you don’t have smoked sausage, you can also use ham. And that tastes incredible as well! What if you need something for breakfast? Use browned ground breakfast sausage in place of the smoked sausage. That is pretty incredible as well!

I typically use an organic cream of chicken soup. You can also swap cream of mushroom if you have that on hand.

With some green beans and applesauce, this hash brown and smoked sausage casserole makes for a cozy and delicious dinner!

Hash Brown and Smoked Sausage Casserole

This cozy and satisfying casserole is perfect for a cold winter night!

Ingredients
  

  • 6 cups frozen hashbrowns shredded or diced, thawed
  • half 14 oz package smoked sausage
  • 1/3 cup Shredded cheddar cheese
  • 1/4 cup sour cream
  • 1 can cream of chicken soup
  • 1 cup onion diced
  • 2 cloves garlic minced
  • 2 tbsp butter melted
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 1/4 cup shredded cheese for top of casserole

Instructions
 

  • Preheat the oven to 350 degrees F
  • Grease an 8x8 baking dish. Set aside
  • Cut the smoked sausage into slices and then quarter each slice.
  • In a large mixing bowl, mix all of the ingredients except 1/4 cup of shredded cheese. Mix until blended fully.
  • Layer the mixture in the prepared baking dish.
  • Top with the 1/4 cup of shredded cheese.
  • Bake for 40 minutes (uncovered).
