I just love a good soup in the winter! And I love creating new soups with ingredients that are new to me. Of course, I always try to use simple ingredients which just make my body feel better. This ground beef and barley soup is no exception! It is simple, and yet satisfying.

The winter of 2022 has been a particularly cold one. It isn’t often we have a lot of winter weather here in South Carolina, even though it can get cold from November through March. But in January of 2022, we had an ice storm one weekend followed by a winter storm with almost 4 inches of snow and ice the very next weekend.

The last measurable snow in South Carolina

The last time we had measurable snow was in 2014. So it is a rare treat to get to go out and play in the snow. It reminds me of my childhood growing up in Michigan. In South Carolina, everything shuts down and the world comes to a stop. And for someone who is sensitive to the business of the world, it can be a delightful time for me. I love nothing more than to curl up on the couch under a few soft, warm blankets. I turn on some soothing music and read while I watch the snow falling outside my window.

And I always love to bake and make meals that warm me up. This time I decided to make ground beef and barley soup. I have been looking to come up with some new soup ideas. And I honestly had never really worked with barley before, so I was excited to work with it and see what it was like.

Barley is a common cereal grain. It looks a lot like oatmeal. It is a gluten-containing grain, so it isn’t appropriate for those who have Celiac disease or gluten intolerances.

This soup is very simple, flavorful, and very filling! This would be amazing paired with some banana bread!

Ground Beef and Barley Soup

This hearty soups is perfect for dinner on a chilly fall or winter night

Servings 4 servings

Ingredients
  

  • 4 cups vegetable broth
  • 1/2 pound ground beef
  • 1/2 small onion chopped
  • 1 Carrot peeled and sliced
  • 1/4 cup pearled barley uncooked
  • 1 lg russett potato peeled and diced
  • 2 cloves garlic minced
  • 1/4 tsp onion powder
  • 1/2 tsp parsley flakes
  • 1/4 tsp herbes de Province
  • 1/2 tsp sea salt
  • 1/8 tsp black pepper

Instructions
 

  • Brown the ground beef
  • Place all ingredients, including ground beef into a soup pot or dutch oven
  • Cook over high heat until mixture comes to a boil
  • Turn heat down to medium and allow the soup to simmer for approximately 30 minutes until potatoes are tender and barley is cooked.
