It is April here in South Carolina. And that means the weather has been warming up nicely since February. But occasionally we still have a chilly day or two and that was certainly the case this year right before Easter. When the weather gets chilly whether it’s spring, fall, or winter, there is nothing that warms me up quite like a fresh pot of soup. And this cheesy smoked sausage and potato soup is my latest creation.
Of course, I have made a lot of different soup recipes over the years. But I was wanting to try something a bit different. And I wanted to use smoked turkey sausage in my soup this time. And I wanted to do this soup on the stovetop (although I’m sure it would also work in the slow cooker or pressure cooker).
I wanted to use plenty of vegetables in this cheesy smoked sausage and potato soup as well. The cheesy soup base that I created for this soup was so yummy that I absolutely love it! I love it enough that I’m going to use it to create some other variations of soup. I’ll use different proteins and veggies to see what other great soups I can create.Â
This soup would be very easy to make low carb. Just omit the potato. And it is naturally gluten and grain free as well. I served this with some freshly baked bread. But it would also be delicious with some homemade muffins or a nice salad.

Cheesy Smoked Sausage and Potato Soup
Ingredients
- 5 red potatoes diced
- 1/2 medium onion chopped
- 1/4 red bell pepper chopped
- 1 stalk celery chopped
- 1 carrot peeled and sliced
- 2 cloves garlic minced
- 3 cups broth
- 1/2 pound smoked sausage sliced and quartered
- 4 oz cream cheese cubed
- 1 cup cheddar cheese shredded
- ground black pepper to taste
Instructions
- Add everything but the two cheeses to a pot and turn on high
- Allow it to boil until the potatoes and carrots are soft, 25-30 minutes
- Take the soup off of the burner and add cream cheese and cheddar cheese. Stir until melted.
