What do you do when you have lots of great vegetables and some smoked sausage that you need to use up, but don’t already have a go-to recipe to use them all in? And you need something without waiting for it to cook in the slow-cooker. You come up with a brand new soup…smoked sausage vegetable soup! And this soup couldn’t be more simple either!
I love March in South Carolina! It means warmer weather here, and I’m often able to open all of the doors and windows to welcome in some fresh air. Today was no exception. It was 80 degrees outside today. Not too shabby for March. I do find myself starting to crave more fresh fruits and vegetables as the weather gets warmer. And so I purchase more fresh produce to have on hand. I love sauteeing fresh vegetables and putting them over some pasta with a bit of fresh parmesan cheese. But I’m feeling the urge to create other new recipes. And I look forward to experimenting with new fruits and vegetables this year.
One-pot stovetop
I did this soup all on top of my stove. It’s a one-pot, throw-and-go type of recipe, which I love. I used the vegetables that I had here to use for this. But you could certainly add some others if you wanted.
What I ended up using for this was garlic, celery, carrots, onion, red potato, yellow squash, zucchini, and orange bell pepper. But you could certainly also add fresh green beans, spinach, asparagus and so much more! This soup is naturally gluten and grain-free for those with dietary restrictions.
I used turkey smoked sausage for this recipe, but you can use whatever type you prefer.
I paired this smoked sausage vegetable soup with some fresh bread to be dipped in olive oil, and some fresh berries. It was the perfect lunch on such a warm and lovely day.
Smoked Sausage Vegetable Soup
Ingredients
- 3 cups broth
- 1 stalk celery chopped
- 1 small carrot peeled and sliced
- 1/4 cup onion chopped
- 1/4 cup bell pepper chopped
- 1/4 cup yellow squash chopped
- 1/4 cup zucchini chopped
- 2 cloves garlic minced
- 1/8 tsp oregano
- 1/4 tsp sea salt
- 1/4 smoked sausage sliced
Instructions
- Place all ingredients into soup pot.
- Allow the soup to come to a boil.
- Reduce heat and allow the soup to simmer until all of the vegetables are cooked through. This should take 30-35 minutes once boiling.
