You like quick, simple, and tasty meals that you and your family will like. And I absolutely agree with you! No one wants to feel like a slave to the stove! So I am going to be sharing the kinds of recipes that you want….simple, quick, and budget-friendly! So I will be sharing more simple prep meals like this slow cooker smoked sausage and potato soup.

One of the tools that will be the best time-saver for you in the kitchen is to use a slow cooker. You can use this year-round to help provide tasty, hot meals. And meals like this soup are great because they are budget-friendly meals that can really help you to stretch your dollar while being tasty and satisfying as well. And you don’t have to worry about all of the added toxins that are found in store-bought soups! Then you can make great soups like this smoked sausage and potato soup!

Ideas for summer

During the warm months of the year, One thing that you can try is to allow the soup to cool just a bit, so it won’t be too warm on those steamy summer nights. And pairing the soup with a nice cool salad and some fresh fruit can help you to provide a filling, nutrient-rich meal to your family.

This soup only takes about 15 minutes to prepare. Just chop up the ingredients, throw them in the slow cooker, turn it on and go! It cooks through the day and makes your house smell amazing and when you are ready for dinner, it’s ready to go! It also uses produce staples that you will typically have on hand…and you have the option of using either vegetable broth or homemade bone broth. If you want to make this soup go a little farther…simply add a few more veggies and an extra cup of broth or water! That will make your soup go even farther!

This is a simple, but tasty soup that is great to keep in your meal rotation, because it’s yummy and so easy! It is also grain-free as well!

Slow Cooker Smoked Sausage and Potato Soup

Ingredients
  

  • 1 pound uncured smoked sausage
  • 4 cups vegetable or bone broth
  • 1 small onion chopped
  • 2 carrots sliced
  • 2 celery stalks sliced
  • 3 potatoes diced
  • 3 cloves garlic diced
  • 1/2 tsp oregano
  • Salt to taste.

Instructions
 

  • Put all ingredients into the slow cooker.
  • Turn on low and cook for 4-5 hours or high for 2-3.
  • Enjoy!

Notes

Don't worry about peeling those potatoes...leave that skin on! It will save you time and actually give you additional nutrients that are found in the skins!
