I love peanut butter cups and other chocolate candy! But have you ever looked at the ingredient list on one of those packages? Yikes! There’s a whole lot to not be so happy about, no matter how good those candies may taste! Not to mention all of the sugar…so much sugar! And so, last night, when I was in the mood to eat a little chocolate. I decided to make my own candy…and these almond butter cups were born!
Okay, let’s be real here for a minute…
I was already in my pajamas and had taken my bra off. There was no way I was going to put my clothes on to go to the store to buy something to satisfy my sweet tooth. I was done “peopling” for the day, and my backside was staying in my nice quiet house on my nice comfy couch! I just didn’t have the energy to face any more humans for the day. I had hit my quota!
I didn’t have any peanut butter in the house, but I did have a brand spanking new jar of almond butter. So I opted for that instead. And voila, these super tasty almond butter cups were born! Of course, I’m about 99.9% sure that these would be absolutely fantastic with peanut butter as well. Maybe any nut butter would work!
These cups were super easy to make and made about 10 fairly large cups. And there are only four ingredients! Four! What?!?!
If sugar isn’t a concern for you, then try the Enjoy Life chocolate chips that I use. They are really yummy! They are soy, dairy, wheat, and grain-free, but not sugar-free. If you’re watching your sugar intake, then I recommend Lily’s chocolate chips. They are sweetened with Stevia and make these almond butter cups sugar-free! I keep both of these in my cupboard!
I use 2-inch silicone cups for this recipe. They are easy to work with and really easy to clean, too!
The homemade almond butter cups are both gluten and grain-free! Bonus!
Homemade Almond Butter Cups
Ingredients
- 1 cup chocolate chips
- 2 tsp extra virgin coconut oil
- 1/4 cup almond butter
- 3 tbsp coconut sugar ground into powdered sugar
Instructions
- Melt the chocolate chips in a double boiler.
- Once melted, add the coconut oil
- In a small bowl, add the almond butter and ground coconut sugar.
- Drizzle some of the melted chocolate into 10 silicone candy cup molds
- Take small spoonfuls of the almond butter mixture and roll into a ball.
- Flatten slightly and place on top of the melted chocolate in the molds.
- Top with more melted chocolate.
- Place in the fridge to harden.
