When the weather is chilly here in SC, there is nothing like a nice, steaming hot bowl of homemade soup. I really love to make soups and stews once the temperatures start to chill. And what I love even more is making slow cooker soups and stews that have very little prep time….because I love to eat homemade food without having to spend hours in the kitchen! This recipe is easy to turn into a low-spoons recipe! I love to make this chicken and potato soup when the weather gets colder!

It has been downright chilly here in SC and was particularly cold last night….warm fuzzy socks and fleece pajamas kind of cold. And for some reason in the wee hours of the morning, I got the itch to whip together a batch of homemade soup….for the slow cooker, of course. This soup is about as simple as you can get.  There are only 8 ingredients, including the seasoning! And it is really tasty too. I love how simple and tasty it is. With my late-night batch, I just threw all of the ingredients into the slow cooker and let it simmer away all night. Voila… the nice homemade soup was ready for me at lunchtime!

Chicken and potato soup is great for flu season

When cold and flu season is in full swing, I really like to use homemade bone broth instead of vegetable broth. I try to keep bone broth on hand because it is SO great for your tummy and so mineral-rich! If I don’t happen to have any bone broth handy, then I will often add some gelatin to my hot soup, just to ramp up the nutritional benefits.

I love to serve this with some nice fresh, warm bread or a salad with lots of fresh veggies. I also really enjoy fixing baked apples or apple crisp with this for dessert. It really is such a great cold-weather soup!

This recipe is naturally both gluten-free and grain-free for those who are eating for specific health concerns.

How to make this low-spoons

Instead of worrying about chopping veggies, you can substitute 2 cans of diced potatoes and pre-cut celery, onion, and carrots. 

This recipe makes 6 servings. It freezes well, so you can make enough for leftovers or to freeze for a quick and easy meal anytime.

Slow Cooker Chicken and Potato Soup

Ingredients
  

  • 1 lb boneless skinless chicken thighs
  • 2 cups potatoes diced
  • 1 cup celery chopped
  • 1 cup carrots chopped
  • 1/2 cup onion chopped
  • 1 tsp Herbes de Province
  • 1 tsp unrefined sea salt
  • 4 cups homemade chicken stock or bone broth
  • 2-3 cloves garlic minced

Instructions
 

  • Put all ingredients into slow cooker
  • Cook on low for 7-8 hours or high for 4-5.
