I have been on a Mexican food kick over the past few weeks because it is just so yummy! And the recipes I have been making are so simple that I almost feel guilty! Naw, I don’t really….I love making food that is healthy, is quick to prepare, and tastes incredible too!! This salsa chicken truly is easy…and delicious too!
When I made the switch to eating meals made with whole food ingredients, it really started helping me to feel better. I was so sensitive to so many of the chemical additives in highly processed foods! And I discovered that my body really does well when eating simple, home-cooked meals.
I love simple meals because frankly, I don’t want to have to spend all kinds of extra time in the kitchen! It just drains my energy to spend too much time cooking…and cleaning up! To me, cooking tasty, healthy, nourishing meals shouldn’t have to take a long time! I had forgotten about this old standby that I used to use years ago. Of course, back in those days, I was using products that are not exactly healthy.
But with homemade ingredients, this recipe was even tastier than it was before. This recipe is great for those days that you need a meal that requires almost no prep time. You can literally get this in the baking dish and ready to go in under 5 minutes! Let it cook and voila….you have a tasty meal!

I typically will buy a good, organic store-bought salsa to use with this. I typically only make from scratch salsa during the summer when tomatoes are in season. So, using an organic variety is absolutely okay to make this dish super simple…and that is a really good thing! You will be amazed at how great this dish really is!
I love to pair this with some cauliflower rice or a nice southwestern salad. It makes for a great meal!
Try this with my Southwestern Salad with Cilantro Lime Dressing. It’s a great side dish!
Now, if you are using large, thick chicken breasts, then you may need to cook these a little longer than what the recipe calls for. Make sure you cook it to 165 degrees F to kill any bacteria!
I often double this recipe and have leftovers the next day…it’s just that good!
Easy Salsa Chicken (Recipes for One)
Ingredients
- 1 boneless skinless chicken breasts or thighs
- taco seasoning
- 1/2 cup salsa organic or homemade
- 1/4 cup cheddar cheese shredded
Instructions
- Preheat oven to 375 F
- Lightly grease 9×13 baking dish
- Place chicken in baking dish
- Sprinkle taco seasoning on both sides of each piece of chicken
- Pour salsa on top of chicken
- Bake for 30-35 minutes (to 165 degrees F)
- Remove from oven
- Sprinkle cheese on top of each piece of chicken
- Bake for another 5 minutes, until the cheese is fully melted
