I am a girl who happens to love chocolate! And sometimes I am looking for a clean, healthy chocolate fix. The good news is that having a little dark chocolate is actually good for you! Dark chocolate (above 70%) is high in good for your health! Studies show that it reduces stress and lowers inflammation. It can also give your mood a boost! And strawberries are rich in antioxidants, which can help ward of oxidative stress and reduce inflammation. Therefore, these chocolate-covered strawberries are a healthier option than other desserts! Any dessert that helps you feel better and reduces inflammation is good in my book!

These juicy little treats are the perfect chocolate dessert for the spring and summertime. I always make a batch in spring when strawberries are in season. Nothing can beat fresh local berries in season for this recipe!

But they are also great for entertaining. They are a huge crowd pleaser and very simple to make! Perfect for parties at any time of the year!

If you are trying to avoid chocolate, you can use carob chips instead. These also work well with white chocolate. You can even try stevia-sweetened chocolate chips if you’re looking to lower your sugar intake.

As long as you purchase grain-free chocolate, these delectable chocolate-covered strawberries are gluten and grain-free!

Chocolate Covered Strawberries

This is a simple and quick dessert that is incredibly popular for potlucks and parties….but just as good anytime!

Ingredients
  

  • 16 oz. package fresh strawberries
  • 10-12 oz package of dark chocolate chips 70% or carob chips

Instructions
 

  • Wash the strawberries, pat dry and set aside.
  • Line a cookie sheet with waxed paper.
  • Melt the chocolate in a double boiler
  • Dip the strawberries in the melted chocolate and place on waxed paper.
  • Put the dipped strawberries in the fridge until the chocolate has hardened.
  • Store in an airtight container.
