Mediterranean Chickpea Salad with Lemon Tahini Dressing
Ingredients
Salad
- 15 oz Can of chickpeas drained and rinsed
- 1 cup cherry tomatoes halved
- 1 cucumber diced
- 1/4 red onion finely chopped
- 1/4 cup pitted Kalmata olives sliced
- 1/4 cup fresh parsley chopped
- 1/4 cup crumbled feta cheese
Lemon Tahini Dressing
- 2 tbsp tahini
- 1 lemon juiced
- 1 tbsp extra virgin olive oil
- 1 clove garlic minced
- 1/2 tsp cumin
- 1/2 tsp sea salt
- 2-3 tbsp water
Instructions
- In a large bowl, add the chickpeas, cherry tomatoes, cucumber, red onion, olives, and parsley. Toss gently to mix.
- In a separate small bowl, whisk together the tahini, lemon juice, olive oil, garlic, cumin, and sea salt. Slowly add water a tablespoon at a time until the dressing is smooth and pourable.
