Mediterranean Chickpea Salad with Lemon Tahini Dressing

Ingredients
  

Salad

  • 15 oz Can of chickpeas drained and rinsed
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • 1/4 red onion finely chopped
  • 1/4 cup pitted Kalmata olives sliced
  • 1/4 cup fresh parsley chopped
  • 1/4 cup crumbled feta cheese

Lemon Tahini Dressing

  • 2 tbsp tahini
  • 1 lemon juiced
  • 1 tbsp extra virgin olive oil
  • 1 clove garlic minced
  • 1/2 tsp cumin
  • 1/2 tsp sea salt
  • 2-3 tbsp water

Instructions
 

  • In a large bowl, add the chickpeas, cherry tomatoes, cucumber, red onion, olives, and parsley. Toss gently to mix.
  • In a separate small bowl, whisk together the tahini, lemon juice, olive oil, garlic, cumin, and sea salt. Slowly add water a tablespoon at a time until the dressing is smooth and pourable.
  • Pour the dressing over the salad and toss until everything is evenly coated. Sprinkle the feta cheese over the top just before serving.
  • You can enjoy the salad immediately, but it’s even better if you let it sit in the refrigerator for about 20–30 minutes so the flavors can meld together.
