It’s fall here in the US and that means it’s the perfect time for wonderful fall flavors. Now I’ve been absolutely in love with making baked oatmeal cups. They make such a quick and easy breakfast or snack. And I’ve done banana walnut and blueberry earlier this year. But I’ve been so excited for fall because I have wanted to make apple cinnamon baked oatmeal cups. I love this flavor combination! And during the fall months, my favorite apple is available…Macintosh.

To me, a Macintosh apple is fall! I grew up eating them when I grew up in Michigan. They were my mom’s favorite apple and were readily available where we lived each fall. So that was the apple my mom always used to whip up tasty treats. My favorites were apple crisp and baked apples. Yum!

I’ve actually been waiting for Macintosh apples to be in season so I could create this recipe. They have a crisp and yet sweet taste, which I love. They also have a very distinct smell compared to other apples. I can’t exactly explain it. But it really does smell like fall to me.

It is that flavor that makes these apple cinnamon baked oatmeal cups so good! And they really do taste amazing. They made my house smell amazing too!

I love making a big batch of baked oatmeal cups! They freeze very well. And it makes it really easy to pull one or two out and defrost them in the microwave for a quick breakfast or snack. I don’t sweeten these with white sugar either. They are sweetened with maple syrup, which just lends itself well to the taste of the oatmeal cups.

These apple cinnamon baked oatmeal cups are naturally gluten-free. But if you have Celiac disease, be sure that you purchase oats that are certified free from gluten (from cross-contamination).

Apple Cinnamon Baked Oatmeal Cups

This simple recipe makes a quick and easy breakfast or snack idea that is perfect for when you're on the go!

Ingredients
  

  • 3 1/2 cups old fashioned oats
  • 1 1/2 cups milk or non-dairy alternative
  • 2 eggs
  • 1 large apple peeled, cored and cut into small chunks
  • 1/3 cup real maple syrup
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/4 tsp cinnamon
  • 1/4 tsp sea salt

Instructions
 

  • Preheat oven to 350 degrees F.
  • Grease a 12 cup muffin pan or line with muffin papers unless using silicone.
  • In a large mixing bowl add all ingredients except oats and apple and mix well.
  • Fold in oats and mix well,
  • Mix in apple chunks.
  • Spoon evenly into prepared muffin pan.
  • Bake for 20 minutes.
  • Allow the cups to cool for 10-15 minutes before eating.
  • Store leftovers in the refrigerator for up to 5 days or store in freezer safe container for up to 5 months.
