I love this slow cooker Southwestern chicken soup recipe! It is another slow cooker recipe that is quick and easy…just throw in the ingredients and go. This one was born out of necessity. I have a cream-based Southwestern-themed chicken soup, which I absolutely adore! But when I was going to make it, I realized that I didn’t have any cream! Ugh!! So I have redone my favorite soup so that it is not cream-based.
There’s something about a slow cooker soup that just feels like a deep exhale at the end of the day for me. This Slow Cooker Southwestern Chicken Soup is one of those meals that practically makes itself, filling your kitchen with warm, savory aromas while you go about your life. It’s hearty without being heavy, packed with tender shredded chicken, colorful vegetables, and just the right amount of smoky spice to make it interesting, but not overwhelming.
I love this recipe because it fits beautifully into a simple, clean living rhythm. Minimal prep, wholesome ingredients, and one pot doing most of the work. It’s the kind of nourishing meal you can feel good about serving your family on a busy weeknight or ladling into a bowl for yourself with a squeeze of lime and a sprinkle of fresh herbs. Cozy, flavorful, and unfussy, exactly how comfort food should be.
This Southwestern chicken soup is not grain-free, but leave out the corn to make it free from grain. I love topping mine with a little grated cheese too….yum!
My favorite slow cooker to use is a small 2-quart (and I have three!). I use it for most of my slow cooker recipes…unless I am making a large batch!
