It’s March here in South Carolina. I love this time of year because the weather is getting warmer, the flowers are starting to bloom and it stays light later. Spring is coming! But occasionally winter likes to give us a reminder that we’re not quite done with it yet. That is what happened this weekend. After a few weeks of temperatures in the 70s and even 80s, we had high temperatures in the 40s and lows in the low 20’s again. It was cold and so for dinner, I was looking for something that would warm me up. I created this yummy sausage and pasta soup.
This soup was done completely on top of the stove. It’s perfect if you have a dutch oven because you can do everything right in it. If not, you may wish to brown your sausage in a skillet and add it to your soup pot once browned.
I have been wanting to make another soup using ground sausage for a while. I love this Tuscan sausage soup recipe so much, but I wanted to do a soup that included pasta and not potatoes as well. So I swapped out a few of the ingredients and voila!
I opted to use gluten-free pasta for my personal version and it turned out very well. You could certainly use conventional pasta. But if you’re looking for grain-free you could also opt for chickpea pasta or even zucchini noodles. I think that any of them would work in this sausage pasta soup.
I used pre-seasoned organic diced tomatoes in my recipe. So I didn’t have to add a lot of seasoning to this recipe. Between the sausage and the tomatoes, it didn’t need it. You’ll notice that there’s no added salt because I didn’t feel like the recipe needed it, although you certainly can!
I also used ground turkey sausage in my sausage pasta soup. I find that it isn’t quite as salty as pork-based sausage and it just feels better for my body. Top your soup with a little bit of shredded parmesan cheese and yum, enjoy!
Simple Sausage Pasta Soup
Ingredients
- 1 pound ground sausage
- 2-3 cups broth
- 1/3 cup onion chopped
- 2 cups spinach stems removed
- 1 can diced tomatoes Italian seasoned
- 2 cloves garlic chopped
- 1 cup penne or rotini pasta uncooked
Instructions
- Brown sausage
- As sausage is close to being fully browned, add onions and garlic and saute
- Once the onions have softened, add the broth and tomatoes and allow the mixture to come to a boil.
- Reduce the heat, allowing soup to continue to simmer
- Add the pasta and spinach and cook until the pasta is cooked to your desired consistency.
