I will honestly admit that I love fresh chocolate chip cookies from the oven. And if I had a craving in the past, I used to go ahead and whip up a batch to satisfy my craving. But since I’m single, that left me with a whole lot more cookies than I really needed to be eating. And they were hard to resist. Since I have struggled with my weight, I wanted to find a way to occassionally indulge without so many leftovers. I’ve learned through the years that continuously depriving myself can be as bad as overindulging all the time. And so I’ve been incorporating a happy medium approach to how I’m eating. That’s why I created this chocolate chip cookie bar recipe.

I know that it is okay to have cookies…on occassion. And so why not create a version that was small enough to allow me to have two servings. That is enough to satisfy my craving, without so many leftovers! Now I’ve also made this with less sugar as well, I’ve substituted coconut sugar for the brown and white conventional sugar. It did change the taste a bit, but it was still yummy.

I have not tried this recipe with gluten-free flours. So I’m not sure how they would impact the final product.

As is, this recipe tastes just like a typical chocolate chip cookie recipe. It has been satisfying for me to get to enjoy a serving of cookie for two days and know that I’m not overdoing it!

Now that I’m making more recipes for one and two people, I love having a 1/8 tsp measuring spoon! It’s so handy, but doesn’t come with every set of measuring spoons! Here’s a set that has one!

This chocolate chip cookie bar recipe is the perfect size for two people. So find someone you can share this with. Or enjoy a little treat on two different days. That’s what I do!

Chocolate Chip Cookie Bar for Two

If you are craving homemade chocolate chip cookies but don't want to make a big batch, this chocolate chip cookie bar recipe for two is the perfect option!

Ingredients
  

  • 2 tbsp butter softened
  • 2 tbsp brown sugar
  • 1 tbsp granulated sugar
  • 1 large egg yolk
  • 1/2 tbsp water or milk
  • 1/3 cup flour all-purpose
  • 1/4 tsp vanilla
  • 1/8 tsp baking soda
  • 1/8 tsp salt
  • 3 tbsp chocolate chips

Instructions
 

  • Preheat oven to 350 F.
  • Grease or butter a 3 cup (.75 qt) casserole dish or a 10 or 12 oz. ramekin. Set aside.
  • In a small mixing bowl, cream together the butter, brown sugar, and sugar.
  • Add the egg yolk, water (or milk) and vanilla. Mix together until fully combined.
  • Add the flour, baking soda, and salt and mix well.
  • Stir in the chocolate chips until fully combined.
  • Add dough to your greased baking dish and spread.
  • Bake at 350 F for 22-24 minutes until golden brown.
  • Remove from oven and allow the cookie bar to cool for at least 10 minutes before serving.

Notes

I have made this recipe several times over the past year. Some times I have to add an additional 1/2 tbsp of water or milk if the dough seems to be a bit dry. This may be because of the size of the egg yolk.
