When I went to the store, I saw a package of boneless, skinless chicken breasts that had been marked down because it was set to expire the next day. And since I needed to fix something for dinner that night, I decided to pick it up. Of course, I am always looking for something simple to make. And since I had just purchased some local honey, I thought it would be a great time to create a honey mustard chicken recipe!
I love that this recipe uses simple ingredients and is quick to prepare. I spent only 5 minutes whipping this up. And I paired this with some rice, but it would work well with mashed potatoes or a baked potato, too.
This recipe is great for those nights when you need to fix something for dinner, but your energy is low!
This baked honey mustard chicken recipe is naturally gluten-free and grain-free. It would be great paired with baked apples for dessert!

Baked Honey Mustard Chicken
Ingredients
- 1 lb chicken thighs boneless and skinless
- 2 tbsp brown mustard dijon, spicy, or stone ground will work
- 2 tbsp honey
- 1 tbsp olive oil
- 1/4 tsp salt
- 1/8 tsp black pepper
- 1 clove garlic minced
- 1/4 tsp rosemary
- 1/4 tsp oregano
Instructions
- Preheat your oven to 350 degrees F
- Place the chicken thighs into a greased baking dish.
- In a small bowl combine all the other ingredients.
- Pour the sauce over the chicken thighs, making sure they are evenly coated.
- Bake for 30-40 minutes (uncovered). Internal temperature of the chicken should be over 165 degrees F
