Healthy Red White and Blue Salad with Simple Strawberry Vinaigrette

I love festive food that is also not only tasty but healthy too! And I wanted to create a salad that was perfect for patriotic days. So I created this healthy red white and blue salad. Of course, it is tasty any time! But it’s a perfect salad for Memorial Day, Labor Day, or the 4th of July.

This salad is antioxidant-rich! Those beautiful berries help to take care of the free radicals that cause inflammation in your body. And that’s important! And if you can get in-season berries the taste is really incredible! To add a little crunch, we’ve got some sliced almonds. And you can use either feta cheese or goat cheese (perfect for those who don’t tolerate cow’s milk). Both work very well to give the salad a little savory taste paired with the fresh berries.

I usually make my own salad dressings…particularly vinaigrettes. They are so simple to make but taste better than the store-bought varieties. Store-bought dressings often contain ingredients that I want to avoid because they just have a negative effect on my body. High fructose corn syrup and chemical flavorings and preservatives are a few of the things commonly found in conventional dressings. Those ingredients leave me feeling yucky! They are just too vibrationally low for my body.

But I can whip a batch of vinaigrette together quickly, knowing that every single ingredient is good for my body. All of the ingredients in this salad make me feel good. And the taste is really amazing together! This vinaigrette also has extra virgin olive oil, which is great for heart health! This vinaigrette is the perfect flavor match for this red, white, and blue salad!

Healthy Red, White, and Blue Salad with Simple Strawberry Vinaigrette

This colorful salad is bursting with flavor and good for your body!

Ingredients
  

  • 2 cups spring mix
  • 1/4 cup blueberries
  • 1/4 cup strawberries sliced
  • 2 TBSP sliced almonds
  • 2 TBSP feta or goat cheese crumbled
  • 1 TBSP balsamic vinegar
  • 1 1/2 TBSP extra virgin olive oil
  • 1-2 strawberries chopped
  • pinch sea salt
  • pinch black pepper

Instructions
 

  • Put the lettuce, blueberries, sliced strawberries, almonds, and feta into a salad bowl.
  • With a food processor or stick blender, mix together the balsamic vinegar, olive oil, chopped strawberries, salt, and pepper until smooth.
  • Pour vinaigrette over salad and serve.
  • Store any leftover vinaingrette in an airtight container in the refrigerator for up to 3 days.
