I will be the first to say that I’m not a big coffee drinker. But I do enjoy an occasional cold coffee drink. Of course, I want to avoid the expensive drinks at the big coffee chains because, well frankly, I want to know exactly what is in my food and beverages. And I do know that there are some ingredients in those popular coffee drinks that are less than good for me. So I decided to start making my own and really wanted to start with a simple vanilla iced coffee. It is so simple to make a batch of cold brew coffee which is perfect for these chilly drinks. You can find instructions on cold brewing coffee here.

So this vanilla iced coffee was my first venture to making my own special coffee drinks. I actually put together a few versions of this until it was just right, but really like the taste! I use a good decaffeinated organic coffee bean, and that, combined with the lower acid cold-brewed coffee make this much easier on my tummy which is nice.

Of course, I also like knowing exactly what is going into this drink. When you buy beverages at the coffee shop, there is always more of a concern about what ingredients may be in their products.

For those with dietary concerns, this beverage is gluten and grain-free.
