Do you ever struggle to find good lunch ideas? I will admit that sometimes I do! Especially eating grain-free! It’s not like I can go and just fix myself a sandwich, right? So I’ve had to get creative with what I’m eating and come up with some new takes on some classic lunch ideas like this easy egg salad!
We all know the egg salad sandwich, but when I eat it, I actually eat it on cucumber slices….yum! You could also dip some celery in and eat it that way as well! Want to make a grain-free egg salad sandwich? Use a lettuce wrap!
This has become one of my regular lunch staples, and I’m so glad that I have something so delicious and easy to make in my lunch rotation!
This recipe is naturally gluten-free, grain-free, and low-carb. If you use homemade or Paleo-friendly mayonnaise, it is Paleo as well. I love to use my homemade mayonnaise recipe with this! So yummy!
My favorite brand of pickles is Bubbies Dill pickles. Â I love them because they use all-natural ingredients, and they are salt fermented, so they are really rich in probiotic goodness! They have amazing flavor too!!!
This recipe makes one serving.
Easy Egg Salad (Recipes for One)
Ingredients
- 2 eggs
- 2 tbsp mayonnaise
- 1 tsp mustard
- 1/2 dill pickle chopped
Instructions
- Hard boil the eggs
- Allow to cool, then peel.
- Place eggs in a small bowl and mash with a fork.
- Add mayo, mustard and chopped pickle and mix well.
- Serve with sliced cucumber, celery or in a lettuce wrap.
