It is really quite interesting how your tastes change over the years. Only a few years ago, I would’ve stuck my nose up at the thought of this blueberry chicken spinach salad. Truly, I would have. Blueberries, chicken, spinach, feta cheese, and a honey and apple cider vinaigrette may seem strange to some. But over the past couple of years, I have been trying food combinations that wouldn’t have appealed to me only a few years ago. I have become somewhat adventurous when trying and creating new foods.
True be said, there have been some things that I have tried that really were not good at all. But the combination of sweet and savory in a salad really can be delightful to the tastebuds! And it feels particularly light and refreshing when the weather is warmer.
A couple of years ago I did a strawberry spinach salad that was really amazing, and perfect during strawberry season! We are now entering the blueberry season and since the price of blueberries is coming down, I thought it was the perfect time to create this salad.
Making it a meal!
It’s simple to grill up some chicken and the chicken makes this a meal salad, not just a side salad, and during the summer months, I really enjoy a salad that can be my whole meal! Very convenient!
For the dressing, I simply mixed together extra virgin olive oil, apple cider vinegar, honey, and a bit of salt. I added each in a small container until I have the right taste….tangy with some sweetness. The whole salad really did far exceed my taste expectations, and I will be fixing it again soon because it was that yummy!
You could easily use a piece of nice goat cheese in place of the feta and it would be just as spectacular, and I will probably do this once I have the chance to visit the farmer’s market and pick up some fresh, local goat cheese….yum!
This salad is also gluten-free and grain-free for those with these particular dietary concerns.
Blueberry Chicken Spinach Salad (Recipes for One)
Ingredients
- 1 grilled or baked chicken breast
- 1-2 cups fresh spinach
- 1/2 cup blueberries
- 1/4 cup feta more or less to taste
- Honey apple cider vinaigrette
Instructions
- Cut the cooked chicken into chunks
- Add the spinach to a large bowl
- Top with blueberries, feta, cut chicken and vinaigrette
- Sit back and enjoy!
