Blueberry Chicken Spinach Salad (Recipes for One)

  • 1 grilled or baked chicken breast
  • 1-2 cups fresh spinach
  • 1/2 cup blueberries
  • 1/4 cup feta more or less to taste
  • Honey apple cider vinaigrette


  • Cut the cooked chicken into chunks
  • Add the spinach to a large bowl
  • Top with blueberries, feta, cut chicken and vinaigrette
  • Sit back and enjoy!
