Cozy Lemon Herb Chicken and Veggie

- 4 chicken breasts or thighs boneless and skinless
- 2 cups baby potatoes halved
- 1 cup fresh green beans
- 1 cup carrots sliced
- 2 tbsp olive oil
- 1 lemon juided
- 1 tsp dried rosemary or 3 tsps fresh rosemary
- 1 tsp dried thyme or 3 tsps fresh thyme
- salt to taste
- black pepper to taste
Heat the oven to 400°F.
Add everything to a large oven-safe skillet or sheet pan and toss gently to coat.
Bake for 35–40 minutes, stirring once, until the chicken is cooked through and the veggies are tender.
Rest for 5 minutes before serving.
