In a shallow dish combine almond meal, parmesan cheese and seasonings. Mix well.
In another shallow dish beat the eggs.
Spray baking dish with olive or avocado oil.
Dip each pork chop in egg, then dip in the almond meal mixture, coating both sides and the edges fully. Do this for each pork chop.
Place coated pork chops on the sprayed baking dish.
Cook for 20-30 minutes depending on the thickness of your pork chops. Chops are fully cooked when they've reached an internal temperature of at least 160 degrees F.
