Parmesan Crusted Baked Pork Chops (Recipes for Two)

Ingredients
  

  • 4 boneless center cut pork chops
  • 1/2 cup almond meal
  • 1/4 cup parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp sea salt
  • 1 tsp paprika
  • 2 eggs beaten

Instructions
 

  • Preheat oven to 400 degrees F.
  • In a shallow dish combine almond meal, parmesan cheese and seasonings. Mix well.
  • In another shallow dish beat the eggs.
  • Spray baking dish with olive or avocado oil.
  • Dip each pork chop in egg, then dip in the almond meal mixture, coating both sides and the edges fully. Do this for each pork chop.
  • Place coated pork chops on the sprayed baking dish.
  • Cook for 20-30 minutes depending on the thickness of your pork chops. Chops are fully cooked when they've reached an internal temperature of at least 160 degrees F.
