Mexican Corn and Bean Casserole (Recipes for Two)

Ingredients

corn

red bell pepper
diced

onion
chopped

cloves
garlic

diced tomatoes

canned black beans
drained and rinsed

cream cheese

tbsp
butter

tbsp
heavy cream or whole milk

taco seasoning
dash salt

cheddar cheese
shredded
Instructions
Preheat oven to 350 degrees F.
In a 4 cup baking dish, add butter, cream cheese and milk.
Microwave on high for 1 minute intervals until the butter and cream cheese have melted.
Add all other ingredients, except cheddar cheese to the butter mixture and stir.
Bake at 350 for 20 minutes.
Top with cheddar cheese and bake for an additional 5 minutes.
