Frittata....Your Way!

Ingredients
  

  • 8 Eggs beaten
  • 1/2 tsp unrefined sea salt
  • 1/8 tsp black pepper
  • 2 tbsp butter
  • 1 1/2-2 cups chopped veggies choose your favorites such as...mushrooms, tomatoes, zucchini, asparagus, spinach
  • 1/3 cup onion finely chopped
  • 1/2 cup meat sausage, bacon, ham, ground beef, etc.
  • 1/2 cup cheese shredded (use your favorite cheese) When using stronger cheese like feta or blue...you may want to use 1/4 cup.

Instructions
 

  • Preheat oven to 400 degrees F.
  • In medium bowl, combine eggs, salt, pepper.
  • Heat butter in an 8 inch, oven proof skillet.
  • Add vegetables and cook over medium high heat until tender.
  • Pour the egg mixture over the vegetables.
  • Sprinkle cheese on top..
  • Place the filled skillet in the oven and cook for 20-25 minutes.
  • Remove from oven and allow to sit for 5-10 minutes
