Healthy Red, White, and Blue Salad with Simple Strawberry Vinaigrette
This colorful salad is bursting with flavor and good for your body!
- 2 cups spring mix
- 1/4 cup blueberries
- 1/4 cup strawberries sliced
- 2 TBSP sliced almonds
- 2 TBSP feta or goat cheese crumbled
- 1 TBSP balsamic vinegar
- 1 1/2 TBSP extra virgin olive oil
- 1-2 strawberries chopped
- pinch sea salt
- pinch black pepper
Put the lettuce, blueberries, sliced strawberries, almonds, and feta into a salad bowl.
With a food processor or stick blender, mix together the balsamic vinegar, olive oil, chopped strawberries, salt, and pepper until smooth.
Pour vinaigrette over salad and serve.
Store any leftover vinaingrette in an airtight container in the refrigerator for up to 3 days.
