When it comes to getting more produce in your diet, salads can really help! I have been enjoying trying new taste combinations in my salad. This past year, there’s been a good amount of emphasis on sweet and savory combinations. This salad is no exception, but it’s not over the top sweet.
I love this salad because it has so many health benefits associated with the nutrients in these ingredients! Blueberries are antioxidant powerhouses! They have one of the highest antioxidant levels of commonly consumed fruits and veggies. But their power doesn’t just stop there! They are also rich in vitamin C, vitamin K and manganese too.
Walnuts are a great brain food! In fact, a shelled walnut even looks a lot like a brain! Walnuts are also rich in antioxidants and vitamin E. They are also a great plant based source of monounsaturated fats which are great for heart health.
Spinach is rich in nutrients like vitamin K and vitamin A. It’s great for heart health, can help to keep blood sugar levels stable and helps to give the immune system a boost. It’s a great inflammation fighter too!
Even blue cheese has some benefits! It’s rich in calcium, phosphorus, zinc and selenium. Including some blue cheese in your diet may help to lower cardiovascular diseases. So it’s good for your heart! It can also help to reduce inflammation in your joints as well as boosting your immune system.
This recipe is super simple to make and can be made for one person…or more! I always use my homemade balsamic vinaigrette recipe with this and YUM!

- Add ingredients to bowl or plate
- Top with vinaigrette
