Have you ever made tomato and cucumber salad? If not, you really should!
The official start of summer is just a few weeks away, but the temperatures are already climbing. School gets out this week here in my neck of the woods. And the growing season is well under way. That means lots of freshly grown produce at my local farmer’s market each week.
Two summer staples are tomatoes and cucumber. And together they make for a cooling, delicious salad! The flavor of this salad is amazing. I love the taste of the tomato and cucumber together. But the flavor of the Italian seasonings in the dressing just kicks it all up a notch!
I really love the simplicity of this salad. You can whip together this salad relatively quickly. You’ll spend the greatest amount of time chopping the vegetables.
I use this with my amazing homemade Greek Dressing recipe. So good! One trick to this recipe is to let the tomato and cucumber sit in the dressing for at least an hour. It really helps to bind the flavor and makes it even better!
I’ve made this recipe to serve two, but it can easily be doubled, tripled or increased to serve how ever many you need. If you eat gluten or grain free, this recipe will work for you!
Recipe Ingredients
- 1 cucumber, cut into small cubes
- 1 tomato, chopped into small pieces
- 1/4 cup sweet onion, chopped
- Greek dressing

- Mix all ingredients together in mixing bowl
