Using coconut sugar as the sweetener is a great option for those who are diabetic or who are concerned with blood sugar levels and is the only low GI sweetener. If you like your coleslaw a little less sweet, then you may want to limit the sweetener to 2 tbsp instead of 3.

Classic Coleslaw for Two

  • 1/2 cup shredded cabbage
  • 1 tbsp shredded carrot
  • 1 tbsp apple cider vinegar
  • 2 tbsp mayonnaise
  • 1 tbsp sucanat, coconut sugar, Swerve
  • pinch celery seed
  • a pinch sea salt
  • pinch ground black pepper
  1. In a small mixing bowl, add all ingredients except cabbage.
  2. Whisk ingredients together until smooth.
  3. In a large bowl, add the cabbage.
  4. Pour rest of the ingredients over the cabbage and mix well.
  5. Refrigerate until ready to serve
